Pernil (Roast Pork Shoulder)

Ingredients

2 tablespoons McCormick® Gourmet Collection Cuban Seasoning
2 teaspoons McCormick® Gourmet Collection Oregano Leaves, Mexican
1/2 cup orange juice
Juice of 1 lime or lemon
3 pounds boneless pork shoulder roast with skin on

Directions

1. Mix Seasoning and oregano. Mix juices in small bowl. Place pork in large baking dish. Peel back skin and fat from pork. (Trim excess fat, if desired.) Score surface of meat with small slits. Pour 1/2 of the juice mixture all over meat. Rub seasoning mixture all over meat, pressing into slits. Pour remaining juice mixture over skin of pork. Arrange pork, skin side up, in dish. Cover.

2. Refrigerate at least 1 hour or overnight for best flavor.

3. Preheat oven to 350°F. Roast 1 1/2 to 2 hours or until pork is very tender and skin is crisp and browned. Let stand 10 minutes before slicing.
