Sweet and Spicy Grilled Fruit Skewers

Ingredients

1/2 cup packed brown sugar
1/4 cup rum
2 teaspoons McCormick® Pure Vanilla Extract
1/2 teaspoon McCormick® Gourmet Collection Cinnamon, Saigon
1/2 teaspoon McCormick® Gourmet Collection Ginger, Ground
1/4 teaspoon McCormick® Gourmet Collection Chile Pepper, Chipotle
1 large pineapple, peeled, cored, cut into 2x1-inch pieces
2 ripe bananas, peeled, cut into 2x1-inch pieces

Directions

1. Stir first 6 ingredients in small bowl until sugar dissolves. Set aside.

2. Thread fruit alternately onto 6 double skewers. Brush with spice mixture. Let stand 5 minutes.

3. Grill or broil fruit skewers on medium heat 10 minutes or until golden brown, basting with spice mixture and turning occasionally. Serve with vanilla ice cream, if desired.

Tips

Test Kitchen Tip: If using wooden skewers, soak in water for at least 30 minutes. To prevent pieces of fruit from spinning around as you turn kabobs, thread fruit onto two parallel skewers for each kabob.
