Cinnamon Apple Nut Muffins

Ingredients

1 1/2 cups flour
2/3 cup packed brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon McCormick® Gourmet Collection 100% Organic Cinnamon, Saigon
1/2 teaspoon McCormick® Gourmet Collection 100% Organic Nutmeg, Ground
1 egg
1/2 cup milk
1/3 cup vegetable oil
1/2 teaspoon McCormick® Pure Vanilla Extract
1 Granny Smith apple, peeled and chopped
1/3 cup chopped pecans or walnuts
1/3 cup raisins

Directions

1. Preheat oven to 400°F. Lightly grease 12 muffin cups or line with paper baking cups. Set aside.

2. Mix first 7 ingredients in large bowl. Beat egg in medium bowl. Add milk, oil and vanilla; mix well. Add to flour mixture, stirring just until dry ingredients are moistened (batter will be slightly lumpy). Stir in apple, nuts and raisins. Spoon batter into prepared muffin cups, filling each cup 2/3 full.

3. Bake 20 to 25 minutes or until toothpick inserted into center of muffins comes out clean. Serve warm.
